98% of a good cup of coffee is water. We had the first 98% right so we thought it would be a great match to bring you the other 2%. The key to great coffee is quality beans roasted fresh and drunk within days, not weeks of roasting. Unfortunately, much of the coffee purchased today is blended with low cost, low quality beans that are far past its date for optimal quality. Blackened, over-roasted beans lose their varietal character. While we roast several beans and bean blends to a dark roast, we believe much of today's coffee is over-roasted. Over roasting destroys the interesting varietal character of many beans and can mask low quality or staleness. We roast to maximize a beans greatest potential and preserve its unique "terroir" - its interesting and unique aromatic properties.
Some beans can be over-powering and harsh while others can be overly mild and bland. We have successfully blended beans with dissimilar properties that have brought out the best in both beans. In fact a well-constructed blend is capable of being more flavorful and interesting than many unblended roasts. We highly recommend sampling our blends.
